Cooking Class Details
This culinary experience will begin with us meeting at the indicated time at MG Road, in the Nullatanni district. From there, we'll walk to the market to get the ingredients that we'll need for the class.
After doing the shopping, we'll head to a family home, the perfect place to immerse ourselves in the flavours and aromas of traditional Kerala cuisine. Time to get to work!
As soon as we arrive, we'll be welcomed by an Indian couple, who will invite us into their kitchen. Before starting the class, we'll prepare the ingredients, including curry leaves, coconut milk and mustard seeds, which will add a crunchy touch to the dishes. Naturally, spices such as turmeric, coriander and cumin will also be present—a true feast of aromas and colours!
With everything ready, we'll split up into groups and get to work preparing a stew accompanied by appam, an aromatic fish or chicken curry and puttu, a traditional steamed rice and coconut cylinder. We'll also make a kadala curry, a thick black chickpea stew with an irresistible kick.
As we chop, blend and sauté, we'll tell you stories of Kerala's culinary heritage and the techniques passed down from generation to generation. We'll enjoy the process, learning step-by-step how to temper the spices to release their aromas and balance the flavours. Once our dishes are ready, we'll sit down to taste our creation—every bite will transport us to the essence of Kerala!
Lastly, we'll have a question and answer session, in which we'll be able to enrich our knowledge even more and share our impressions of the gastronomic experience.
After a total of 6 hours of immersion in the cuisine of Kerala, we'll say our goodbyes with a satisfied palate and happy bellies.
