What is Guatemala’s most traditional dish? Pepián! It’s a thick stew of Mayan origin that has been designated a Cultural Heritage dish.
To learn how to make it, we’ll pick you up from your hotel in Antigua Guatemala and head to the Central Market, one of the city’s most authentic and bustling spots. As soon as we arrive, we’ll wander through its aisles filled with lively stalls where vibrant colors, spicy aromas, and the constant bustle of vendors dominate.
Here we’ll select the fresh ingredients we’ll use in the recipe: dried chilies, tomatoes, miltomate, pepitoria (pumpkin seeds), and traditional spices. Did you know that many of these products were already part of the Mayan diet centuries ago?
After a 45-minute visit to the market, we’ll head to a fully equipped local kitchen. There, we’ll put on our aprons and get to work preparing the pepián.
We’ll start by roasting the key ingredients, a fundamental technique for intensifying the flavors and achieving that thick, characteristic texture of the stew. Next, we’ll grind them in a mortar until we obtain a complex, aromatic sauce, which we’ll combine with meat and vegetables.
Once ready, the moment we’ve all been waiting for will arrive. We’ll taste the pepián we’ve prepared, accompanied by a traditional drink. Get your taste buds ready for its intense flavor!
After enjoying this culinary experience, we'll return to your hotel, where we will say goodbye after a total of 5 hours.
