At the scheduled time, we’ll meet at La Perseverancia Market Square, a popular spot that preserves the essence of a traditional neighborhood market and brings it to life through all the senses.
Here, we’ll step into a daily rhythm of trades, aromas, and flavors. Among fruit stalls, we’ll learn about pulps rich in carotenoids, natural sugars, and organic acids that define the tropical flavor balance. Of course, we’ll try some of them.
We’ll learn about Bogotá’s traditional bakery, with recipes such as pandebono and almojábana, where cheese fermentation blends with cassava and corn starches. The drinks will take us even further back in time as we taste masato and chicha, ancestral fermented beverages that reveal the social and cultural importance of corn.
After exploring the market, we’ll head into the streets of La Macarena. This urban area combines republican-style architecture and low-rise houses with urban art murals that reinterpret Colombia’s recent history.
We’ll walk through the so-called Zona M, known as Calle Bonita. There, we’ll observe eclectic façades, galleries, and cafés that have turned the neighborhood into a cultural hub. Many of these buildings were once homes of artists and academics in the 20th century.
We’ll finish the tour at a local restaurant, where we’ll enjoy a lunch of lechona, a traditional pork dish stuffed with rice, peas, and spices. You can also pair it with a tamal made with meat and vegetables wrapped in a banana leaf.
Finally, we’ll say our goodbyes at the initial meeting point after a total of 3 hours.
