Casa Sauza

At the historic Casa Sauza, in the heart of the Pueblo Mágico of Tequila, you'll step inside one of the most prestigious tequila distilleries in Jalisco. Welcome!

From the very start of the visit, you'll discover the distillery's heritage, closely tied to the rise of tequila as a symbol of Mexico. Casa Sauza was founded in 1873, when Don Cenobio Sauza acquired the La Antigua Cruz distillery, which would later be renamed La Perseverancia, a name it still carries today.

After this historical introduction, you'll make your way through the distillery's open areas. You'll first learn about the importance of the blue Weber agave, the only raw material permitted in tequila production under official regulations. Did you know that from planting to finished product, the entire process can take between 5 and 8 years?

You'll see how, after the jimado harvest, the agave piñas go through the cooking stage, where sugars are converted into fermentable form. This is followed by juice extraction, fermentation in tanks with yeasts, and finally distillation... typically carried out in 2 stages to produce blanco tequila.

The tour will also give you an appreciation for the historic character of La Perseverancia, a distillery that blends tradition with modernization. Casa Sauza drove significant renovation and industrialization throughout the 20th century, with key innovations in both production and agricultural practices.

One standout development is the use of reduced-size ovens for cooking the piñas, a change the brand highlights as key to better controlling the roasting process and refining the tequila's flavor.

At the end of the tour, you'll take part in a tasting session, putting basic tasting techniques into practice: visual observation, aromatic analysis, and palate assessment.

  • 1 cantarito tasting (1 hour): includes a cantarito, a cocktail made with blanco tequila, citrus, salt, and chamoy
  • 3-tequila tasting (2 hours): you'll enjoy 3 tequilas: a blanco, a reposado, and an añejo
  • 4-tequila tasting (3 hours): want more variety? This option includes the same 3 tequilas as above, plus a cristalino tequila—a young spirit that's woody and fresh at the same time
  • 5-tequila tasting (4 hours): includes all the tequilas from the previous options, plus a selection of specialty tequilas — the most exquisite and full-bodied expressions in the Casa Sauza range
