We'll meet at Registan Square and, after a short introduction, head to the market of Samarkand. Once we arrive, we'll step into its halls filled with aromas of oriental spices, mountains of rice, and fresh meats. What a great way to start this culinary experience!
Here, we'll learn how to choose the best ingredients to prepare our star dish, pilaf, a symbol in Uzbekistan and an Intangible Cultural Heritage. Did you know there are over 100 variants of this dish in Samarkand?
After spending 30 minutes in the market, we'll go on a 30-minute journey to the house of a local family, who will greet us with the warmth that characterizes Uzbek hospitality. With our ingredients and utensils ready, we'll learn about all the preparation stages of pilaf or plov. From sautéing the meat and onion to adding carrots cut into strips and rice, topped with cumin and whole garlic cloves. It'll make your mouth water!
When the aroma announces that the dish is ready, we'll head to the table in the garden. We'll also try baked bread in the traditional tandoor oven and homemade desserts, like gilmindi, made with thin layers of lavash and cream. During the tasting, you'll enjoy a tea ceremony as we listen to the stories of rural life in Uzbekistan.
After this delightful meal, we'll return to the initial meeting point in Samarkan, where we'll say our goodbyes after 5.5 hours.
