Workshop Details
At the appointed time we'll meet you along Pasñapakana street, in San Blas, to start our chocolate workshop in Cusco. During the class, we'll learn how to prepare Belgian-style pralines and mediants, using 100% organic and artisanal cocoa from the community of Quillabamba. Here we go!
Once the introductions have been made, we'll begin by exploring the rich history and culture of chocolate. Next, we'll get down to business, creating pralines. First, we'll prepare the couverture and leave it to dry in molds. What makes it different from regular chocolate? The extra cocoa butter, of course! Then, we'll make the filling, also known as ganache, by mixing chocolate and heavy cream together.
Then, we'll move on to the preparation of the mendiants, chocolate discs decorated with fresh nuts and dried fruits, harvested from the Sacred Valley of the Incas. These local ingredients will bring an unrivalled flavor and freshness to every bite.
Once the fillings are ready, we'll return to the pralines to decorate them with a selection of organic jams and nuts, all sourced from the Sacred Valley. While we wait for the pralines to cool and be ready to go, we'll teach you how to make a delicious hot chocolate.
At the end, you'll take home around 30 pralines and mendiants that you made, in a personalized box that will be a special souvenir of this 2.5-hour workshop.
