How are French wines made? What are the best food pairings? What nuances distinguish one variety from another? To answer these and many other questions, we'll meet at 12 Rue Durand. There, just 5 minutes walk from the Saint-Roch train station, you'll find Spiritus, a popular wine bar in the center of Montpellier.
First, we'll give a brief introduction to French wines and learn how white wines are produced. After the theory, it’s time to put it into practice with a tasting of two white wines. The varieties will vary depending on availability, but we’ll try to sample local specialties from areas near Montpellier, such as Camargue, the Rhône Valley, Occitania, and other regions of southern France.
Throughout the tasting, we'll explore the regions of origin and the grape varieties used. Then, we'll analyze each wine visually, on the nose, and on the palate. We'll also cover aspects such as texture, structure, acidity, dominant aromas, balance, and more. Between wines, we'll learn the rules of food pairing. In addition, we'll discuss types of agriculture, such as conventional, organic, and biodynamic, and how climate, slope, and soil affect grape quality.
We'll continue the tasting by learning about the process of making red wines. After this introduction, we'll sample three French red wines using the same rules and methods we used for the whites.
This final tasting will conclude our 1-hour 15-minute experience.
